Happy Valentine’s Day!

Look what I made today for my family…some sweets for the sweet!!! These are homemade caramels….oh and they are soooooo good!

It was a long time coming this morning….this is the disaster that I had going on in my kitchen!  Multitasking wasn't worth it…I was trying to get a deposit together, stirring my homemade caramels in between getting checks and cash organized.  BAD IDEA!  This is what happened….

And of course it just kept burning!!!  Smoked up the entire kitchen!!!  What a mess!

And then I had things under control again.  I moved my caramel mixture to a bigger pan and kept on cooking and stirring….I DID NOT try to multitask!!!  I actually left that mess there until I had my caramels cooked.  It was really hard for me…but I didn't want to screw up the whole batch.

As long as I was making caramel – I had some left over cashews from Christmas and I just had to make some fancy candies too!!!

Are you drooling yet???  Here's my finished product!  Cashew Turtles!!!  My friend Jean made this plate for me – perfect!!!  Hailey's boyfriend doesn't like chocolate…I KNOW RIGHT???  So I made him some white chololate turtles…

Caramels

Ingredients

  • 2 cups white sugar
  • 1 cup packed brown sugar
  • 1 cup corn syrup
  • 1 cup evaporated milk
  • 1 pint heavy whipping cream
  • 1 cup butter
  • 1 1/4 teaspoons vanilla extract

Directions

  1. Grease a 12×15 inch pan.
  2. In a medium-size pot, combine sugar, brown sugar, corn syrup, evaporated milk, whipping cream, and butter. Monitor the heat of the mixture with a candy thermometer while stirring. When the thermometer reaches 250 degrees F (120 degrees C) remove the pot from the heat.
  3. Stir in vanilla. Transfer mixture to the prepared pan and let the mixture cool completely. When cooled cut the Carmel into small squares and wrap them in wax paper for storage.
